The idea sounded simple enough. Instead of counting calories or carbs, you count the number of foods you eat in a week that come from plants, with the goal of reaching 30.<\/p>\n\n\n\n<p>Every fruit, vegetable, bean, nut, seed, herb, and spice counts, so variety is key. And eating a variety of plants\u2014aiming for around 30 a week\u2014helps feed a broader range of beneficial gut bacteria, which is linked to better immunity, improved mood, and overall health.<\/p>\n\n\n\n<p>I decided to try it myself. As a vegan, I figured I had a head start. Still, I wasn\u2019t sure whether I actually ate a wide variety of plants or simply rotated through the same familiar favorites.<\/p>\n\n\n\n<p>On <strong>day one<\/strong>, I made a list of every plant I ate: oats, blueberries, cinnamon, chia seeds, spinach, tomatoes, quinoa, <a href=\"https:\/\/www.peta.org\/living\/food\/12-surprising-ways-use-chickpeas\/\">chickpeas<\/a>\u2014by lunchtime, I was already at eight. That alone made me feel like the challenge might be surprisingly doable. My list grew naturally throughout the day, without a special grocery trip.<\/p>\n\n\n\n<p>One thing that surprised me was how the challenge encouraged me to be creative in the kitchen. Instead of adding more of the same foods to my meals, I found myself thinking, \u201cWhat\u2019s one more plant I can toss in?\u201d<\/p>\n\n\n\n<p><strong>I boosted my 30 plants a week total by:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Adding a handful of greens to pasta and soup<\/li>\n\n\n\n<li>Swapping white rice for quinoa<\/li>\n\n\n\n<li>Tossing seeds and nuts in my salad<\/li>\n\n\n\n<li>Enjoying a variety of <a href=\"https:\/\/www.peta.org\/lifestyle\/food\/canned-beans-recipes\/\">beans<\/a> throughout the week instead of just one<\/li>\n\n\n\n<li>Keeping frozen fruit on hand to add to oatmeal<\/li>\n\n\n\n<li>Experimenting with fresh herbs<\/li>\n\n\n\n<li>Sprinkling cinnamon on <em>everything<\/em><\/li>\n\n\n\n<li>Buying one new <a href=\"https:\/\/www.peta.org\/lifestyle\/food\/produce\/\">produce<\/a> item each grocery store visit. Have you ever had egg fruit? I have (now).<\/li>\n<\/ul>\n\n\n\n<p>By the end of day two, I was at 22, and by the end of the week, I exceeded my goal.<\/p>\n\n\n\n<p>But the most meaningful number isn\u2019t how many plants I counted; it\u2019s the nearly 200 animals each person can spare every year by eating vegan, saving them from miserable lives and terrifying, painful deaths.<\/p>\n\n\n\n<p>Chickens, who love sunbathing, won\u2019t languish in dark sheds where they never feel the sun on their faces. Mother cows, who form deep bonds with their calves, won\u2019t cry out in anguish as dairy farm workers steal their babies so humans can drink the milk meant for those little ones. Pigs, who enjoy playing with toys, won\u2019t scream as workers cram them into metal crates so small they can\u2019t turn around. Beans, grains, potatoes, and seasonal produce are some of the most <a href=\"https:\/\/www.peta.org\/lifestyle\/food\/eating-budget\/\">affordable foods<\/a> in any store. What changed was how determined I became to see just how many different plants I could work into a week.<\/p>\n\n\n\n<p>You don\u2019t have to hit 30 perfectly, and you don\u2019t need specialty ingredients.
